I absolutely love breakfast, I could eat breakfast dishes for lunch and dinner and I can’t be alone surely?! Breakfast is the best meal of the day and I always enjoy it the most, probably because I’m super hungry having not eaten for 12 hours, albeit 8 of those I have been asleep but hey who’s counting, but also being a foodie and constantly thinking about food and new creations probably doesn’t help that I need snacks like this.

I’m a huge fan of recipes like this and I regularly make a number of different oat recipes and combine these oat recipes into cupcake recipes and I’m all over it. I love the ease and simplicity of creating recipes which require just one bowl, no mixer, few ingredients and small amounts of effort. Not only is this recipe easy but it is also super tasty and possibly my new favourite. The sweetness of both the apples and the almonds work together perfectly and create a super moist breakfast treat which can be enjoyed on their own for a grab-and-go or equally in a bowl with a pool of yogurt, you decide 🙂

These cupcakes are made with a combination of oat flour and oats which does give them a denser consistency as with any oat based recipe but I’m a fan of this and it keeps me full for longer. Simply combine your dry ingredients in a bowl and then add your wet ingredients to the bowl and combine well but do not overmix and then fold through the apple and flaked almonds. You could also opt to use a processor to mix the wet ingredients until fully combined and then add the mixture to the dry ingredients. I baked these in cute little heart shape silicone moulds just to make them even more perfect <3

Apple Almond Oat Cupcakes

  • 1 cup oats
  • 1 cup oat flour
  • 1 tsp baking powder
  • ¼ tsp fine sea salt
  • 2 flax eggs
  • ¼ cup apple sauce
  • 1 cup almond milk
  • 1 tsp almond extract
  • ¼ cup maple syrup
  • ¼ cup coconut oil, melted
  • 1 small apple, finely chopped
  • ½ cup flaked almonds
  1. Pre-heat oven to 350F/180C/Gas Mark 4. Set aside 10 lightly oiled cupcake moulds.
  2. In a large mixing bowl combine the flour, oats, baking powder, and salt.
  3. In a separate mixing bowl combine the flax eggs, apple sauce, almond milk, extract, maple syrup and coconut oil until well combined.
  4. Pour the wet mixture into the dry mixture and combine but don't over mix.
  5. Then fold in the apple and flaked almonds until combined thoroughly.
  6. Pour batter into cupcake moulds and bake for approximately 15 minutes or until browned and a toothpick comes out clean.
  7. Remove from the oven and set aside to cool completely on a cooling rack before removing and serving.
  8. Keep at room temperature for 1-2 days or in the fridge for up to 5 days.
