Oh. Oatmeal, how I have missed you!

I always forget how much I love something, until I have it again, and then make it again and again and then exhaust it and maybe return to it a year later! Oh, it’s hard work – this foodie hobby thing, but on the plus side; we all get to try some amazing recipes until we’re exhausted together.

So yeah it’s been a little while since I’ve had a Baked Oatmeal Tray like this, but my food trends work in Seasons and it’s pretty darn dark and dismal outside with Winter now here, so cosy warm baked Breakfasts are on the menu in this kitchen!

What better way to start off the Winter flurry of Baked Oatmeal than with this Cherry Bakewell version. Oh My, it’s so good and totally inspired by my recent Bakewell Slice which I had been craving for sooo long and since going Vegan, I have been enjoying Veganising many recipes which I used to enjoy as a child and a teenager and this ‘Cherry Bakewell Oatmeal’, is just a Bakewell Slice but in a warming oaty Breakfasty kinda way.

I have used the principle ingredients which were in my Bakewell Slice to replicate that delicious almondy-cherry flavour in this ‘Cherry Bakewell Oatmeal’. So here we have a predominately Oaty base with almond meal and protein powder, which is totally optional but I like to add an unsweetened version wherever I can. This combined with the almond milk, maple syrup for unrefined sweetness and almond extract which is the real must-use ingredient in this ‘Cherry Bakewell Oatmeal’ and if it is missed out, you will not get the classic Cherry Bakewell flavours. The whole Oatmeal tray is then combined with the addition of sweet pitted cherries folded through to replicate that Cherry Jamness, and then topped off with a good scatter of flaked almonds and baked until golden and delicious!

This ‘Cherry Bakewell Oatmeal’ is such a gorgeous Breakfast replica of my Bakewell Slice that I think I will be seriously hooked. It is perfect served warm with non-dairy Cherry or any Berry Yogurt and a Glace Cherry to top it all off! Damn it’s good, and don’t just take my word for it – try it for yourself! The leftovers (if there are any!) also store perfectly in an air-tight container in the fridge for up to 3 days or I’m certain it would freeze perfectly fine too!

Serves: Serves 4-6
  • 2 cups Oatmeal
  • 3 tbsp soya protein powder
  • ½ cup almond meal
  • 1 tsp baking powder
  • ¼ tsp fine salt
  • 1 tbsp chia seeds
  • 1 tbsp almond extract
  • 1½ cups almond milk
  • 4 tbsp liquid coconut oil
  • 3 tbsp maple syrup
  • ½ cup frozen pitted cherries
  • ½ cup flaked almonds
  • Glace cherries, to decorate, optional
  1. Preheat the oven to 350F/180C/Gas Mark 4. Set aside a baking dish.
  2. In a large mixing bowl combine the dry ingredients. In the centre of the same bowl, add the wet ingredients and combine.
  3. Then stir through the cherries to incorporate thoroughly.
  4. Pour the mixture into the baking dish and scatter the flaked almonds over evenly.
  5. Bake in oven for 25 minutes on 350F/ 180C/Gas Mark 4.
  6. Remove from the oven once golden and firm to touch.
  7. Let cool on a cooling rack for 5 minutes before serving with some dairy-free cherry yogurt and glace cherries to top.
