These are my new guilty pleasure.

They’re sooo damn good and I do feel a little naughty indulging in them, and find it rather difficult to stop at just one slice..(oops!) I was inspired to make these after I had an obsession with my Rice Puff Cereal which is also soo good and I cannot get enough. It feels like a sweet treat for breakfast with some nice-cream or non-dairy coconut/almond yog! So I decided this has got to be made into some indulgent dessert. And I guess thinking about it, it’s also very nostalgic and like rice crispy squares you used to make as a kid and I think they’re just as good but more refined.

My partner Ryan (a.k.a. the taste tester) who I get to try more-a-less everything I make, thought these were like the classic ‘Rocky Road’ bars, which being a Vegetarian, I have never tried so couldn’t compare but I guess I could kind of see where he was coming from as the Rice Puffs could replicate chewy soft Marshmallows. He commented on the fact they had a dark chocolate taste, which yes they do, but this is the case when using cocoa powder, and I love it! I always use ‘Sevenhills’ cocoa powder and I highly recommend it and many of their other products too.

As you may know my obsession involves all things sweet and generally adding chocolate flavours wherever possible, and even breakfast where my sweet-tooth doesn’t go away still, and as I said Chocolate Granola won me over of course and with Chocolate Banana Ice-cream, it’s the best combination for a cheeky weekend breakfast! So these Chocolatey Rice Puff Squares are my new addition to my cheeky dessert list. I also love to sneak in Peanut Butter wherever I can, and often this involves Chocolate and Peanut Butter creations as they are two of my most favourite things and they combine together so well. So for this recipe you I recommend either drizzle of Peanut Butter frosting on top and set in the freezer or you could incorporate into the bars themselves. I also added a little desiccated coconut for extra sweetness. Trust me when you make these, you won’t look back at the alternatives which often use ingredients such as butter. I will also be playing around with these to create further variations and I have a few ideas I think would work but for now just tuck-in!

Chocolatey Rice Puff Squares

Serves: Approx. 10 squares
Ingredients
  • 2 cups cocoa powder
  • ½ cup coconut oil
  • 5tbsp agave nectar (or maple syrup)
  • 1sp vanilla extract
  • 2 cups rice puff cereal
  • ¼ cup desiccated coconut
  • pinch fine sea salt
Instructions
  1. Melt coconut oil in a small saucepan on a low heat. Remove from the heat and whisk in cocoa powder, sweetener, vanilla extract and pinch salt.
  2. In a large bowl, combine rice puff cereal and coconut, then pour over the chocolate mixture.
  3. Combine together really well and place into your pan, levelling it out so that it is compact and smooth on top.
  4. Place in the freezer to firm up for 30 minutes, remove from the freezer and cut into approx. 10 bars. Drizzle with optional peanut butter frosting.
  5. Store these in the freezer so they remain set and just grab-and-go!
