Pizza is one of my favourite things, but I class it as a treat food, and not something I indulge in often.

I literally used to live on pizza, unfortunately, this isn’t a joke. Probably 5 days a week, I would eat a classic cheese and tomato pizza, and the other 2 days, I would probably eat cheese and tomato pasta. I honestly cannot remember eating anything else, but thankfully, those days are long gone and now pizza is an occasional occurrence when I really fancy it.

And sometimes, I don’t even fancy a typically classic dough-based pizza, and I just fancy the whole concept of sauce base, topped with my favourite vegetables and dairy-free cheese. When these days happen… this recipe happens! I’ve been making cauliflower based recipes for a little while, until I experimented with adding some courgette from my sisters leftovers! This was a good plan as it holds together much better and cauliflower and courgette really well together.

The recipe is so easy to make and unlike regular dough-based pizza recipes, you can be eating your cauliflower and courgette based pizza within 30 minutes! Simply whizz all the ingredients together until the ‘dough’ forms and then bake to firm up slightly, before topping. I love topping most of my pizzas (dough-based and plant-based) with a homemade BBQ sauce recipe, followed by any greens I have on hand (in this case, bell pepper, onion and broccoli), and then sometimes I add dairy-free cheese depending on how I’m feeling, or a homemade cheesy mustard drizzle (as pictured) but otherwise it is still very yummy without any cheese!

This is a great alternative to pizza, perfect for weeknight evenings where time doesn’t allow you to let dough rise for hours. It is also more nutritious being plant-based and it is gluten-free my friends so easy on the stomach!

Gluten-Free Cauliflower and Courgette Pizza

  • 1 courgette, flesh
  • 90g cauliflower florets
  • 1 flax egg
  • ½ cup almond flour
  • 1 tsp onion powder
  • ½ tsp garlic powder
  • 2 tbsp choice of base (BBQ, tomato, hummus etc.)
  • Your choice of vegetables (onion, pepper, courgette, broccoli, olives, artichoke etc.)
  • Your choice of dairy-free cheese if desired
  1. Pre-heat the oven to 350F/180C/Gas Mark 4. Line a baking tray with parchment paper and set aside.
  2. In a food processor, firstly pulse the cauliflower and courgette flesh until the cauliflower is like breadcrumbs and the flesh is smooth. Then pulse through the flax egg until combined. In the food processor, or in a mixing bowl, add the almond flour, onion powder and garlic powder and combine until thoroughly mixed through to create the dough. Remove the dough from the processor and divide into two.
  3. Then with your hands place the dough on the lined baking tray and flatten and shape into a round pizza shape, with both pieces of dough.
  4. Bake them in the oven for 10 mintutes. Then remove from the oven and top them with your choice of base, toppings and cheeze if desired.
  5. Bake in the oven for 15-20 mintues, until the base is crispy and the top has browned and vegetables have cooked.
  6. Serve with a side salad and sweet-potato fries, is desired.
