Jerk Spiced Grilled Aubergine and Jerk Cauliflower Rice

I was inspired by my Jerk sweet-potatoes dish to create something else equally as delicious with my Jerk seasoning blend which is absolutely amazing and bursting full of flavor. I love to make these as it is so tasty, filling and really easy and quick for a mid-week meal and I enjoy the leftovers for lunch the next day and I would even eat this cold, I love it that much!

I also really want to explore some more with Caribbean cuisine as I have minimal experience of this type of food but seeing as I love the ingredients they use in their Vegetarian dishes then I think it’s time I took the plunge as I eat and enjoy hugely many other cuisines such as Indian, Mexican, Asian and Japanese.

I’m not sure if it’s because I’m becoming increasingly aware that I want to try some Caribbean food but I’ve been noticing it pop up more. I recently went to one of my local Vegan festivals (in my local area covering a few different towns we have approximately 3 a year) and they bring out such a good turn out which I love to see, but anyway this year and last year there was a Caribbean food stall selling amazing look curries, pasties and fried plantain and also another food stall selling the biggest slabs of Caribbean inspired cakes that you’ll ever see! Also my local seaside town has recently seen the opening of a Caribbean café/restaurant which I am yet to try but I think this is a sign that I must be more adventurous!

As I said I love the ingredients they use with a combination of spicy and sweet…this is totally me all over. I’ve noticed a lot of Vegetarian dishes use my favourite sweet-potato, black beans, mango, pineapple, coconut, plantain, BBQ sauce and of course JERK seasoning – all of which bring happiness to my taste buds.

How to:

For this recipe I have paired my favourite homemade Jerk spice blend with some soy sauce, a splash of water, some olive oil and some honey for sweetness. I then marinated each of my aubergine slices on either side in the mixture for 15-30 minutes. Whilst the aubergine slices have been set aside on a lined baking tray, it is a good time to make the cauliflower rice by pulsing the cauliflower pieces until rice sized pieces are formed (will only take a couple of pulses), then heat a pan over a low-heat with a tbsp. of olive oil and add a tsp of cumin seeds to the pan and heat for a minute until they crackle, then add the cauliflower ‘rice’ for a few minutes, then add the kidney beans and the mango for a few more minutes until cooked through, you can also add a small amount of marinade if you have any left over. Now go back to the aubergine and heat a griddle pan over a low heat with a tbsp. of olive oil, place the aubergine slices on the griddle pan (do this in batches so not to overcrowd), heat on one side for 2-3 minutes until it starts to brown and then flip over to the other side for another 2-3 minutes until you get the griddle char marks, repeat this process until all of your slices have been used up (approximately 14 slices). Serve the aubergine slices (approx. 5 per person) alongside the cooked cauliflower rice. You could serve it with some Jerk BBQ sauce of mayonnaise if you wish. This recipe is best served on the day of cooking and it will serve 2 – 3 people depending on your portion size.

Ingredients
  • 1 aubergine, sliced
  • 2 tsp jerk seasoning (1/2 tsp cinnamon,1/2 tsp nutmeg, ¼ tsp allspice, ½ tsp black pepper, 1 tsp garlic powder, 1 tsp cayenne pepper, 1 tsp thyme, 1 tsp parsley, 1 tsp brown sugar,1 tsp paprika, ½ tsp crushed red pepper flakes)
  • 1 tbsp honey
  • 1 tsp soy sauce
  • 1 tbsp olive oil
  • 1 cauliflower, cut into chunks
  • 1 tsp cumin seeds
  • 1 can kidney beans, drained and rinsed
  • 1 mango, diced
Instructions
  1. First make the cauliflower rice by pulsing the cauliflower and couple of times into 'rice', heat a tbsp of oil and add the cumin seeds for a minute or until the seeds crackle, then add the 'rice' for a few minutes, then add the mango and the kidney beans and cook through for a few minutes. Place under a low grill for a few minutes whilst you cook the aubergine.
  2. Now heat a griddle pan over a low heat with a tbsp. of olive oil, place 3-4 marinated aubergine slices on the griddle pan (you'll need to do this ¾ times), heat on one side for 2-3 minutes until it starts to brown and then flip over to the other side for another 2-3 minutes until you get the griddle char marks, repeat this process until all of your slices have been used up.
  3. Serve the aubergine slices (approx. 5 per person) alongside the cooked cauliflower rice and some Jerk BBQ Sauce if you like.
