Do you love chocolate and want to add some additional protein into your diet?… Of course you do. Trust me, these bars are for you. I would always prefer to make my own bars, whether they are protein bars, flapjacks or granola. Homemade is always best as you can control exactly what is going into them, so no unnecessary ingredients and I personally feel better knowing exactly what I’m putting into my body.

These are perfect as they are raw (no-baking required) and they can be eaten for breakfast, which is my favourite thing as it means I can get my chocolate fix before 10am (ooops) and are a perfect workout snack, and they actually keep me full thanks to the oats and protein = win win!

These little beauties are simple and healthy and made with a base of oat flour (always a winner in my books) and protein powder (I always use soya protein), sweetened naturally with coconut and dates, added crunch, texture and nutrition with walnuts and cocoa nibs and just water or almond milk is needed to combine the whole mixture.

Once combined, simply pop in the freezer to firm up so they can be cut into equal sized slices and then drizzle with your chocolate sauce. Healthy AND tasty. These are perfect for a snack on-the-go and can be kept in the fridge for up to a week or in the freezer for longer term storage… just thaw before you serve.

Nutty-Choc Protein Breakfast Bars

Serves: 8 bars
Ingredients
  • 1 cup oat flour
  • ½ cup vegan soy protein powder
  • ¼ cup cocoa powder
  • 1 cup pitted dates, soaked until soft, drained reserving water
  • ½ cup walnuts
  • ¾ cup desiccated coconut
  • 1tsp vanilla extract
  • ½ tsp fine sea salt
  • Reserved date water, as needed (50ml-100ml)
  • 2tbsp cocoa nibs + ¼ cup walnuts, crushed
Instructions
  1. Line a dish with parchment paper.
  2. Place the flour, protein powder and cocoa powder in a processer to combine.
  3. Then add the drained dates, walnuts, coconut, vanilla and salt and combine well until a dough forms, adding water gradually as needed.
  4. Then stir in by hand the cocoa nibs and crushed walnuts.
  5. Place the dough into a lined dish, pressing down firmly and smoothing out the top.
  6. Place in the freezer for an hour to firm up.
  7. Remove from the freezer, cut into bars and drizzle over the chocolate.
