It’s probably fair to say, I’ve been going a little mad with the Oreo recipes recently and I’ve still got some more ideas to come for these bad Cookies.

Why you might ask? Well, both here in the UK and in the US, Oreo Cookies are loved by literally everyone and you are never too far away from them. Plus, my recent Veganism has meant I am trying all things Vegan because let’s be honest, the options can be limited.

As I have said in a previous post, I’m not a fan at all of store bought items such as this and 98% I make my own sweet treats so I know exactly what has gone into them, but occasionally, indulgence is okay, plus my OH loves what I call ‘naughtier’ treats, so I like to make these things which will appeal to us both.

Oreo’s are one of those ‘accidently Vegan’ items which everyone loves and a Vegan diet can enjoy them too because the ‘cream’ is a whole bunch of unhealthy sugary ingredients so nothing Vegan’s cannot eat, though some may choose not to. I, myself, wasn’t sure if Oreo’s really were Vegan as there seems to be a bit of uncertainty but I’ve come to the conclusion that if my local solely Vegan pub can serve 4 desserts incorporating Oreo’s… then they must be!

As with my ‘Layered Oreo Brownies’, these are half for me and half for my OH. His half is the Oreo Cookies and my half is the somewhat more nutritious Blondie part which I have Veganised and healthiefied (if that’s even a word?!).

I hadn’t tried a Blondie before, and I must admit I don’t think a Blondie is something we come across much in the UK as its rival opposite ‘Brownie’ will always win, because Chocolate! And because I love Chocolate so much, I will sneak it into my Blondies too.

A Blondie is described as a White Brownie which contains butter and sugar creating a Butterscoth flavour in place of the Cocoa/Chocolate in Brownies. The remaining ingredients are quite similar to Brownies and they create a similar consistency to Brownies and can incorporate walnuts, pecans, chocolate chips or butterscotch chips to give them a different twist, but here I have used Oreo’s to create ‘Oreo Blondies’, because, again, Chocolate…!

Personally, I’m a chocolate kinda girl, so a Brownie will always win for me, but a Blondie is a nice recipe to make if you don’t fancy a heavy chocolate Dessert, and despite the ingredients in the Blondie, they feel a lot lighter to eat than a Brownie. If you’re not a die-hard Chocolate fan then you may love this more or equally as much, and my OH said to me ‘I definitely think I prefer these’. I didn’t tell him that was almost cause for a break-up!

So, my healthier Veganised Blondies contain:

  1. Chickpeas which replace a huge bulk of the flour needed as they’re a great binder
  2. Dates in place of the brown sugar as they are naturally sweet and sticky
  3. Almond butter in place of butter or margarine
  4. Oreos!

These Blondies are suitable for all, as they can be gluten-free (use GF flour instead), they are sugar-free (ignoring the Oreo’s here), plant-based and so delicious without feeling too guility! You can add an extra layer of yumminess, as I did, with a topping of homemade Chocolate sauce, which is optional, but if you love Chocolate, then why not!

  • 1 can chickpeas, rinsed, drained reserving 1 tbsp brine
  • ¼ cup smooth almond butter
  • ½ cup dates, soaked and drained
  • 1 tsp vanilla extract
  • 4 tbsp non-dairy milk (add 1 tbsp at a time as necessary)
  • ½ tsp fine salt
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • 4 tbsp wholemeal flour (add 1 tbsp at a time as necessary)
  • 6 Oreo cookies, crushed
Chocolate Sauce
  • 2 tbsp cacoa powder
  • 2 tbsp maple syrup
  • ½ tsp vanilla extract
  • 3 tbsp milk
  1. Pre-heat the ovento 350F/180C/Gas Mark 4. Line a rectangle baking dish and set aside.
  2. In a food processor, add the chickpeas and pulse to break them down, then add the remaining ingredients except the flour and oreos. Blend the ingredients until smooth, adding the flour as necessary (not too wet and not too try). Then add the oreos, and pulse a few times to combine in the batter.
  3. Remove the batter from the processor with a spatula and place in the baking dish and spread
  4. out the batter and smooth over the top.
  5. Bake in the oven until the edges are golden and the top is firm and looking a little cracked.
  6. Approximately 30 minutes.
  7. Remove from the oven and set aside on a cooling rack until completely cooled as they will
  8. firm up a lot on standing.
  9. Meanwhile, make the sauce by whisking all the ingredients until no lumps remain.
  10. Once the Blondies have cooled, remove them from the dish and cut into 6 chunks and top with sauce.
