A Skillet is something quite new to me. And if you’re in the UK like me, I believe we know a Skillet as a Frying-pan but I think Skillet sounds much better and is far more fitting, particularly for a recipe like this.

I first bought a Skillet because I really wanted to make Cookie Dough, in the shape of an extra-large Cookie, because why not!? The joys of a Skillet, is that it can be easily transferred, cooked and tucked into with minimal fuss and washing-up!

My fellow foodie friends, a skillet is your best friend for a recipe such as this. It is so convenient, naturally non-stick, and I absolutely love mine for the ease. I am yet to use my Skillet for anything other than Dessert recipes like this but you can sear, fry, sauté, grill, roast and bake with your Skillet.

I hadn’t used my Skillet nearly enough for my liking (I think I had used it a mere 2 times!), so I thought now was the time to make another delicious Dessert recipe in my Skillet. And let me tell you, if you’re not convinced already, this is one of the easiest and most delicious Desserts you will make. Not only is it easy and delicious but it is so convenient to serve a group of guests, and it looks great too!

Just imagine, you’ve had a lovely main-course and now you’re waiting for dessert to cool down (this is the hardest, most painful part!) and you bring out your fancy Cast-iron Skillet and everyone digs in! Or if you’re not into that idea, you can be more traditional and serve it on individual plates with a dollop of your favorite ice-cream.

I’m getting far too excited about this recipe so before I stop typing to go and make myself another ‘Oreo Brownie Skillet’, let’s discuss the recipe. Firstly, it is super simple to make by simply combining all of your ingredients in a food processor (except Oreo’s) and process until smooth. Once it is smooth, fold through your Oreo’s. Take a spatula and place the Brownie Batter in your Skillet (add a little hot coconut oil first), spread the batter out evenly but keep a centimeter around the edges clear. Here you can add an extra layer of indulgence, if you wish (however, I did not) with some extra crushed Oreo cookies. Then pop your Cast-iron Skillet straight into the oven and bake for approximately 20 minutes, until the Brownie is firm and it will look cracked which will indicate it should be done. The hard part is now waiting for your Brownie to cool (otherwise it will be gooey if you cut into it now). It will continue to cook and firm up in the Skillet as well as cooling down to room temperature. If you can leave your Skillet to cool for 10 minutes or a little more, this should be enough time to top with some dairy-free ice-cream of choice (I used Alpro Hazlenut and Chocolate).

One of the many great things about this ‘Oreo Brownie Skillet’ is that it is dairy-free, egg-free, flour-free, refined sugar free and I feel far less guilty for over-indulging in this yummy skillet brownie than I would many other Brownie recipes. This is one of my absolute favourite recipes to make for a quick Dessert that I can chuck in the oven and let it cool whilst I let my main-course go down!

  • 1 can chickpeas, drain, reserve 2 tbsp brine
  • 4 tbsp almond butter
  • ⅓ cup maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp coconut oil, divided
  • 1 tsp baking powder
  • 4 tbsp cacoa powder
  • 4 oreo cookies, crushed
  1. Add 1 tbsp coconut oil to your cast-iron skillet and set aside. Pre-heat the oven to 350F/C/Gas Mark 4.
  2. In a food processor, add the chickpeas, brine, almond butter, maple syrup, vanilla and 1 tbsp coconut oil and process until smooth, scraping down the sides as necessary.
  3. Then add the baking powder and cacoa powder and process until combined in the wet ingredients, again scraping as necessary.
  4. Then add the crushed oreos and pulse or stir through until incorporated.
  5. Heat the skillet until the oil is hot and coated the skillet, then using a spatula add the batter to the skillet, smooth over the skillet, leaving a little gap round the edges.
  6. Place in the oven for 20 minutes until firm to touch (it will be slightly cracked).
  7. Remove from the oven and allow to cool slightly on a cooling rack for 10 minutes.
  8. Serve warm with non-dairy ice-cream (my favourite is Vanilla or Chocolate)
