I think like most of us, I am always looking for quick and easy weekday breakfasts that I can grab in the morning and either take with me on-the-go or I can eat with little preparation and therefore saving on precious time in the mornings before heading out the door.

So say hello to my best friend…overnight protein oats! You’ve probably heard of this concept by now and if you haven’t, where have you been? This is literally what it sounds like, oats soaked overnight, therefore making them soft and edible for the morning. Oats pack a lot of fibre and whole-grains and in theory should keep you full for longer…not always true for me but hey worth a try?! I add protein to mine for extra nutrition but this is completely optional and can be omitted.

You can make your overnight oats however you wish as they are completely customisable and depend on your needs and tastes. I personally have a love for chocolate and peanut butter so I’ll either combine the two or make a peanut butter smoothie or a cocoa based smoothie and add my oats afterwards. You may prefer plain tasting or fruity for example which are just as good so it really just depends on what you love.

To make my overnight oats I always use a blender so that everything is mixed and combined thoroughly and then I stir in my oats or grouts afterwards. The recipe I have provided below is a basic base recipe for classic overnights oats with *optional additions depending on your preference*. You can make up enough for two consecutive days to keep in the fridge and then in the morning before you head off or you’re ready to eat, top it with optional toppings such as fresh fruit, dried fruit and nut mix or granola.

Overnight Protein Oats

Serves: 2 servings
  • 500ml almond milk
  • 50g plain or coconut yogurt
  • 1tbsp chia seeds
  • 2tbsp unflavoured soya protein powder
  • 1tsp vanilla extract
  • 80g oats, divided
  • *1-2tbsp cocoa powder + 1tbsp liquid sweetener + ¼tsp ground cinnamon
  • *1tbsp peanut butter/peanut butter powder
  • *1 large handful spinach or kale
  • *1tbsp almond butter + 80g berries
  1. Place all ingredients in a blender in the order shown above and blend until smooth.
  2. Divide between two mason jars, stir in 40g oats per jar and store in the fridge overnight.
  3. Just before serving top with optional fresh fruit, nuts and seeds, cocoa nibs or granola
