Two of my most favourite ingredients? Peanut Butter and Bananas and the combination together = perfection. As a Vegetarian and someone who does eat a predominantly Vegan diet, bananas are a saviour, they provide me with ‘ice-cream’, natural sweetness in many baked goods, a thickener for many smoothies and surprisingly can replace the fats in baked recipes such as these breakfast scones as they hold dry ingredients together without always having the need for added fat.

I’ve confessed my love for Peanut Butter on many occasions and love to add it to sweet and savoury dishes as well as Peanut Satay Sauce being one of my favourite dips/dressings ever!

And as for Jelly (a.k.a. Jam), I’m a big fan, I love sweet stuff and I love fruit and you can make your own Jelly quite simply with fresh or frozen fruit, a bit of sweetener and chia seeds for a chia jelly or try some fresh fruit, sweetener and cornstarch, or maybe just buy some from your local supermarket or farm shop. I love all flavours of Jam really but for PB & Jelly I think strawberry or raspberry would work best.

Now these Peanut Butter and Jelly Banana Oat Bars are made solely with oat flour and if you have baked with oat flour before then you will know it does create a rather dense (think heavy and stodgy) product but this is totally fine and for a recipe like this, its what I’m after. It reminds me of a sweet-banana bread but only in bar form and with the addition of extra sweetness on top from the jelly, and who doesn’t want added sweetness right?


These are the ideal choice for a breakfast snack, they are Vegan, can be gluten-free (if you use gluten-free oats), refined sugar-free and they transport really well on-the-go. They are best stored in the fridge for up to 3 days but enjoy at room temperature (simply remove from the fridge 30 mins before consumption)

PB & Jelly Banana Oat Bars

Serves: Serves 8
Ingredients
  • 1.5 cups oat flour
  • 2 tbsp. soya protein powder
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • 2 bananas, ripe
  • ½ cup smooth creamy peanut butter
  • 2 tbsp maple syrup
  • 4 tbsp berry jam, divided
  • 2 tbsp almond milk or coconut oil
Instructions
  1. Pre-heat the oven to 350F/180C/Gas Mark 4. Line a baking dish with parchment paper and set aside.
  2. In a large mixing bowl, combine all the dry ingredients well and set aside.
  3. In a separate mixing bowl, combine all the wet ingredients (except 2 tbsp jam) well (I used my food processor) making sure they are smooth and combined.
  4. Add the wet ingredients to the dry ingredients and mix until combined but don't over-mix.
  5. Pour the batter into the lined baking dish and take 2 tbsp jam and carefully spread it over the batter with a fork or a skewer.
  6. Place in the oven for 15 - 20 minutes, or until browned.
  7. Remove from the oven and let cool completely before slicing into equal sized bars.
  8. Store in the fridge in an air-tight container for up to 3 days.
