This recipe is a bit of a take back to my Summer Fruits Breakfast Cobbler recipe which I posted back in March now…seriously where does time go?!

When I made this cobbler, I was going through my phase of cooked fruits and some kind of baked topping for breakfast. This was around the same time as when I posted some of my first recipes including sweet-apple-and-raisin-breakfast-crumble and apple-pie-crumble. These recipes were perfect for that time of year (February/March) when a nice warm breakfast at the weekend (when one has more time) was exactly what I needed.

When I made the Summer Fruits Breakfast Cobbler  I had some leftover cobbler topping which I used to make delicious little cookies which I’ve had in the freezer ever since. The original cookies are finally in my belly and I thoroughly enjoyed them as an addition to my breakfast bowl so I decided to re-make them, this time as a cookie recipe that I planned to eat as a breakfast cookie.

I love breakfast cookies. They are usually simple and easy to make, they can be a bake or no-bake recipe, they are the perfect grab-and-go snack and I always incorporate nutritious ingredients into mine. These Semolina and Oat Cobbler Cookies are different to my usual go-to breakfast cookie because they are very plain (no added seeds, nuts or dried fruits) and they contain Semolina, which is an ingredient I hadn’t thought to use before, but it really works as an alternative to more oats or flour.

For my cookies, I halved the mixture and made plain ones and ones with cacoa powder for a chocolatey alternative but I must admit, the plain ones were my favourite as the sweet but savouriness came through more as opposed to chocolate which I didn’t love as much. You can make these with or without the cacoa powder and decide which you prefer most!

Semolina and Oat Cobbler Cookies

  • 4 tbsp semolina
  • 1 cup oat flour
  • 1 tsp baking powder
  • ¼ sp fine sea salt salt
  • 1 tbsp coconut sugar
  • 1 tbsp maple syrup
  • ½ tsp vanilla extract
  • 2 tbsp coconut oil, melted
  • ½ cup almond milk
  • 1-2 tbsp cacoa powder, *optional
  1. Pre-heat your oven to 350F/180C/Gas Mark 4. Line a baking tray with parchment paper and set aside.
  2. In a mixing bowl, combine the semolina, oat flour, baking powder, salt, sugar (and optional cacoa*)
  3. In a separate bowl combine the milk, maple syrup, vanilla extract and coconut oil and then add to the dry mixture, and gently mix to combine.
  4. Take spoonfuls of the mixture and shape into equal sized cookies (I made 10 cookies - half with cacoa*)
  5. Bake in the oven for approx. 20 minutes, until firm. Remove from the oven and place on a cooling rack until cooled.
  6. Eat them on their own or serve with fresh fruit and your choice of yogurt.
