Strawberry Chia Jam Crumble Bars

As it’s strawberry season and I’m totally addicted to the deliciously sweet fruit I just couldn’t resist creating a recipe with them! I actually very rarely create a recipe using fruit whether it is fresh or frozen because I love eating it just as it is but seeing as it is strawberry season and they are so readily available and easy to pick up from my local market just down the road then I thought I would buy extra and create a delicious breakfast recipe for you all.

I think I might have mentioned before how much I love breakfast and breakfast inspired recipes but to be honest you could have this one with your afternoon tea but if you’re like me and you cannot wait until then, then this recipe is totally acceptable for breakfast or elevenses.

The recipe is inspired by my Sticky Toffee Date Crumble Bars and my Blueberry Cheesecake Crumble Bars which are both fantastic recipes which again I would consider eating for breakfast/elevenses or as an afternoon tea snack. I love crumble bars for a few reasons… a) you can use the same ingredients for the crumble topping and the base b) you can customise them and fill them with more-a-less whatever takes your fancy c) they are super filling and definitely always delicious.

This recipe begins by making a basic Strawberry Chia Jam which is left to cool whilst you make the base and topping ingredients. I have used a combination of flours for this but you could use whatever you have on hand but I like to use wholemeal and spelt flour as they have a better nutritional profile but if you’re gluten-free then you can adapt this to your needs. To make my ‘dough’ I used pitted and soaked dates as they are perfect for binding and I also added a little strawberry flavouring which is optional but recommended. For my topping, I add a little extra sweetness with some coconut sugar and some crunchy crumble with some added whole oats.

 


How To:

Firstly start by making the jam by placing fresh or frozen strawberries on a low-medium heat on the hob with 1 tbsp water or lemon juice. Cook until softened and reduced, stirring to prevent sticking. Then remove from the heat, stir through sweetener and chia seeds and set aside to cool down whilst you make the ‘dough’ for the base and topping.

In a food processor combine all ingredients (adding date water as necessary to form) except whole oats and coconut sugar until they combine into a dough. Divide the dough in half and place one half in the baking dish, smoothing out evenly with a spatula to create a flat base and then top with the chia jam and smooth out evenly.

With the remaining dough, add the coconut sugar and oats and pulse a couple of times to create a crumble topping. Gently press this in on top of the chia jam, evenly coating over the whole thing. Pop it in the oven for approximately 20 minutes or check until firm and golden.

Remove from the oven and set aside to cool before slicing into bars.

Ingredients
  • 3 cups strawberries, quartered
  • 1 tbsp lemon juice or water
  • 1 tbsp agave syrup
  • 2 tbsp chia seeds
  • 1.5 cup oat flour
  • ½ cup wholemeal flour
  • ½ cup spelt flour
  • 1 tsp strawberry flavouring
  • ¼ tsp salt
  • ¼ tsp baking soda
  • ¾ cup pitted dates, soaked and drained (reserve some liquid)
  • 1 tbsp coconut sugar
  • 2 tbsp whole oats
Instructions
  1. Preheat the oven to 350F/180C/Gas Mark 4. Line a baking dish with parchment paper.
