We all go through fazes and cravings yeah? Mine are usually time of year related with the weather and what’s in season and easy/readily available to buy. So through Summer months I was eating a lot of salads with roasted veggies and particularly beetroot, which I found a massive love for. The colour is amazing, it tastes sweet and it can be eaten in so many different dishes, both sweet and savoury.

Seeing as it is now cold and miserable outside, therefore, for me this means lots of soup! Whenever the weather changes I go from soups and hearty warming stew type dishes in the cold months to various types of salads in the warmer months.

This particular combination is a new favourite of mine as it combines all my favourite ingredients. Beetroot pairs beautifully with sweet-potatoes and was my go-to combination when roasting my salad veggies, and then in turn sweet-potato pairs perfectly with root veggies such as parsnips and carrots, but these can be optional as I have made this soup with and without and am equally happy with both.

This soup has now been made quite a few times in my kitchen as it uses simple ingredients and doesn’t require the addition of herbs and spices as these particular vegetables pack enough flavour all on their own, plus the use of coconut milk which adds creaminess and sweetness, but this soup gets very thick so requires a litre of vegetable stock to thin it out but it makes enough at least 5 servings and tastes and looks amazing…just look at that pink, pretty right?!

You can also make this in your soup maker as I do… such a good little invention that requires no previous cooking of ingredients, however, if I have got the time I will pre-cook some of the vegetables to add extra flavour such as my onions, garlic, ginger and roast the veggies before adding them in.

  • 1tbsp oil
  • 1 onion, diced
  • 1tbsp garlic-ginger paste
  • 500g roasted beetroot
  • 2 large sweet potatoes, peeled and diced
  • 400ml coconut milk
  • 1litre vegetable stock
  • Pinch sea salt and ground black pepper
  1. Heat oil in a large pan, add onion, garlic and ginger and cook until soft, approx. 5 minutes.
  2. Add the sweet potatoes and saute for 5 minutes, then add the stock and coconut milk and bring to a boil.
  3. Reduce the heat to medium-low and add the beetroots and continue to simmer until the vegetables are soft once prodded, approx. 20-30 minutes.
  4. Season with salt and pepper. Remove from the heat and add to a food processor or use a hand blender and blitz until smooth.
  5. (You can also do this in a soup maker as I do which doesn’t require any prior cooking)
